Oyster mushrooms are some of the finest culinary mushrooms and typically have soft caps with meaty stems. They are a delicacy in Chinese, Japanese and Korean cuisine and are frequently served in soups or stir fries. They are much more flavourful than button mushrooms and make a great replacement in a variety of dishes. They can be sautéed with butter or olive oil, salt and commonly garlic to make a delicious standalone dish or the perfect addition to burgers, sandwiches and salads.

 

Oyster mushrooms are very easily digested and are one of the only Low-FODMAP certified mushroom species. Like all mushrooms, they should always be cooked thoroughly before eating so that you can properly digest them and they will develop their rich umami flavours. Gourmet mushrooms must be picked within a short window and should be eaten fresh so they are harvested within 1-2 days of delivery. Depending upon the crop availability for the day, your order will contain a mix of the following species:

Italian Oyster


We cultivate a unique strain of Italian Oyster (aka. Phoenix Oyster) which we believe has the finest texture and flavour. Their stem is the most tender of all the Oyster mushrooms and they tear apart easily by hand. They have an addictive savoury flavour. They are great when mixed into pastas, risottos, soups, stir fries or in any recipe calling for mushrooms due to their versatile flavour. Their flavour is intensified when fried in a single layer with butter/oil and salt until brown and crispy on both sides.

They have a relatively long fridge life of around 7 days.

Pink Oyster

Pink Oysters are famous for their meaty texture and bacon-like flavour when they are salted and fried until brown and crispy. These bright pink mushrooms are perfect for breakfasts or any occasion calling for bacon. Their large, thick caps grow from tiny stems which are usually removed due to their tougher texture.

They have the shortest fridge life of any Oyster mushroom and should be cooked within 2-3 days.

Yellow Oyster

Also known as Golden Oysters, these mushrooms have a fruity aroma with notes of cinnamon. As they are cooked, they develop a balanced, nutty flavour reminiscent of cashews. Their caps are extraordinarily delicate with a smooth, velvety texture and their stems are pleasantly chewy.

Ideally cooked within 3 days.

If you have a preference for a particular species, please let us know in the order notes and we will do our best to accommodate you. We don't recommend washing our mushrooms before cooking them - they are always clean and pesticides are never used in our grow rooms. They are grown using W.A. Eucalyptus, legumes and rain water.

Mushrooms are like mini chemical factories. Oyster mushrooms produce a wide range of antioxidants and other compounds which have been studied extensively. The antioxidant Ergothioneine has been found in remarkably high concentrations in Yellow Oysters - higher than in any other mushroom. Compared with button mushrooms, Oyster mushrooms contain twice the amount of beta-glucan, a famous polysaccharide known for a range of benefits. You can find many YouTube videos and scientific studies on the benefits of including these mushrooms in your diet.

 

Oyster mushrooms are especially rich in B Vitamins compared with other mushrooms including Thiamine (B1), Riboflavin (B2), Niacin (B3), Pantothenic Acid (B5), Pyridoxine (B6) and Folic Acid (B9). They are a great source of protein, dietary fibre and many other nutrients such as Potassium, Phosphorus, Zinc, Copper, Manganese and Selenium.

Current Free Delivery Area

We currently offer free delivery over $30 from Yarloop to the Bunbury area on Wednesday afternoons. Pickup is also available from the farm in Yarloop with notice. Fresh mushrooms are marked out of stock when they are sold out for the upcoming Wednesday. The website will only allow you to select delivery if your address is within our delivery zone. Please contact us if you are outside of it and we may be able to accommodate you.​

We are located on the premises of The Skipworth Wine Company. The cellar door is open on weekends from 11am-5pm if you would like to pick up mushrooms and try some wine at the same time.
