Oyster mushrooms are a culinary delight with delicate caps and meaty stems. Their delicious umami flavour can be enjoyed as a standalone dish or versatile addition to recipes. We cultivate unique strains Italian Oyster, Popcorn Oyster, Pink Oyster and Yellow Oyster. They produce many different antioxidants with various effects.​

Lion's Mane produces a range of chemical compounds which have been studied extensively. They also happen to be delicious when cooked, developing a mild and slightly sweet flavour which is almost like a cross between chicken and lobster. Their texture is meaty and spongey, readily absorbing the flavours of a meal or marinade.

We use these blocks to grow all the mushrooms on our farm. They are larger than most other grow kits weighing between 3-5kg and produce giant harvests of nutrient-dense mushrooms. They simply require misting 2-3 times per day with a spray bottle of water to enjoy the freshest exotic mushrooms possible.

Our unique cultures are sourced from all over the world and they each have a story to tell about the environment they originate from. They have amazing flavours and textures which are unlike any other food. We think of them more like strange meats than as vegetables. Mushrooms have much more in common with mammals than they do with plants. They breathe oxygen, exhale carbon dioxide and share nearly 50% of their DNA with humans. Their natural habitats are humid forests throughout the world. They use sunlight to produce their stunning colours and various compounds including Vitamin D, of which they are the only non-animal source. They even produce melanin like we do. The meaty taste of mushrooms mostly comes from Glutamate, a neurotransmitter contained in some meats. Mushrooms are amazing little chemical factories and they produce a staggering variety of compounds which can have powerful effects.

 

All of our mushrooms grow on dead wood in nature and we use Eucalyptus sawdust. Different growing mediums influence the flavour and texture of the mushrooms. "You are what you eat" applies to mushrooms too and ours have a pure, nutritious diet of W.A. Eucalyptus, legumes and rain water. Mushrooms are bio-accumulators and they absorb everything from the air and water they grow with. We never use pesticides and work hard to imitate a pristine forest environment in our grow rooms. We have worked for years to select a variety of resilient fungal cultures which thrive in our harsh W.A. conditions. They tolerate a wide range of fruiting temperatures which minimises air-conditioning requirements and also makes them easier to grow at home, year-round. We offer our extra-large commercial grow blocks for sale with detailed growing instructions and optional fine mist spray bottles and humidity bags.

We currently offer free delivery on orders over $30 from Yarloop to the Bunbury area on Wednesday afternoons. Pickup is also available from the farm in Yarloop with notice. Fresh mushrooms are marked out of stock when they are sold out for the upcoming Wednesday. The website will only allow you to select delivery if your address is within our delivery zone. Please contact us if you are outside of it and we may be able to accommodate you.​

We are located on the premises of The Skipworth Wine Company. The cellar door is open on weekends from 11am-5pm if you would like to pick up mushrooms and try some wine at the same time.
